Hope you all had a great Christmas. It is a special time and for us it was even more special as for the first time in 2 years we had a family Christmas together. And it was a family affair as we all cooked the meal together.
I wasn’t flying overseas and our sons were home so it was a family Christmas altogether. As usual early in December I baked the Christmas cake, iced, cut and wrapped them individually, then the ham was cooked and glazed. The stuffing and veggies cooked to perfection along with the roasted potatoes, gravy and cranberry sauce by my wife. Our older son cooked the turkey which was stuffed with apples and onions, covered with a bacon lattice and glazed with maple syrup – it was delicious.
We didn’t do a Christmas pud though, as it is not something our sons like. Instead I blind baked a shortcrust pastry base, covered it with a almond meal frangipane mixture and topped it with macerated stone fruit and berries and baked it – delicious! All the same ingredients as in a traditional plum pud but with fresh fruit rather than dried and something the family loved because there was hardly any leftovers!
