Warm mandarin salad

Fresh juicy mandarins add a refreshing touch of sweetness to a warm winters salad.

Ingredients
3 medium sized fresh seedless mandarins
1/4 cup raw unskinned almonds, chopped roughly and toasted
1 small packet Halloumi cheese (180 gms)
750 gms packet of microwaveable Brown rice and quinoa ( or grains of your choice)
1 small fennel or half large bulb
1 cup rocket leaves
3 tbsp extra virgin olive oil
2 tbsp white balsamic or sherry vinegar
salt & pepper
Fennel fronds for garnish

Method
Finely grate the skin of one mandarin, remove segment sand any of the white membrane and squeeze or crush to juice.
Combine juice and zest and add the oil and vinegar and salt & pepper to taste.
Segment the other two mandarins.
Trim and finely slice the fennel and drizzle with olive oil and prinkle with salt.
Wipe the halloumi cheese and wipe dry, slice and cook in a lightly oiled frying pan until golden brown. Turn slices over and brown the other side and reserve.
Add the segmented mandarin slices to the pan and warm through. Cook the rice or grains in a microwave for 90 seconds and combine the rice/quinoa, mandarins, halloumi, sliced fennel and rocket in a bowl. Toss to combine add the dressing and rocket and top with toasted chopped almond.
Serve warm.
